This easy recipe is has lots of pineapple and cheddar cheese topped with a buttery Ritz cracker crust and baked until golden and bubbly.
While we often think of pineapple in desserts, this casserole is a sweet and savory side dish. While the ingredients may sound odd, the flavors work. And I promise if you show up with this dish, you’ll be everyone’s favorite person!
Keep leftover pineapple casserole in an airtight container in the refrigerator for up to 4 days, and enjoy it cold or heat in the microwave if desired.
Freeze in a freezer-safe container for up to two months; however, the crackers will be soggy. Feel free to add fresh crackers to the top and pop it under the broiler until the cracker crumbs are crispy and golden brown.

Topping
½ cup salted butter melted40 Ritz Crackers crushed
Preheat oven to 350°F.
In a large bowl, combine the pineapple, cheese, sugar, and flour. Transfer the mixture to a 2 QT baking dish.
In a medium bowl, mix the melted butter and crushed crackers until evenly coated.
Sprinkle the crackers over the top of the pineapple mixture and bake for 30 minutes. Serve warm.
Granulated sugar may be used instead of light brown sugar.
Other butter crackers may be used instead of Ritz, you should have about 1 1/2 to 2 cups of crushed crackers.
